Our Story

Kolache Depot Bakery opened its doors in Ennis, Texas in August of 2003.  It began as a family-run Czech bakery serving an assortment of breakfast pastries including fruit and sausage kolaches, cinnamon rolls, ham & cheese pockets, coffee, milk and juice.

Over the next four years, the menu grew exponentially.  It became a favorite hang out for locals to meet and enjoy pastries or lunch, and a tourist hot spot for those passing through town who wanted to experience the local Czech cuisine.

In October of 2008, Kolache Depot Bakery acquired a local restaurant, Brown Street Cafe, and the two merged January, 2009 into one location.

Kolache Depot Cafe & Bakery encompasses the best of both worlds.  We not only provide a wide variety of melt in your mouth Czech pastries and savory hot dishes, but also an array of delicious and healthy soups, salads and sandwiches...and of course we offer an enormous selection of pies, cakes, cookies, bars and puddings made fresh in our own kitchen.

Our Family

Kolache Depot Cafe & Bakery is owned by Ennis natives Greg & Sally McElroy.  Greg holds a Bachelor's degree in Accounting from UTA and brings his accounting, sales and customer service experience into the business; and Sally, a former stay-at-home mom and community volunteer, brings her organizational expertise and creative touch to their partnership.

Lisa Sohns, manager, joined the staff in early 2004.  She came to us from Washington State with 25+ years restaurant experience.  Lisa is the heart and soul of Kolache Depot Cafe and Bakery and is known by our local customers as the devoted Nascar fan wearing a ball cap and a huge smile.

Shannon Lefler, after considerable persuading, joined us in 2008 as our specialty baking manager.   Our customers look forward to seeing what's in the dessert case each day and are constantly delighted by her made to order decorated cakes and cupcakes.  Not only are Shannon's creations eye pleasing, they are absolutely delicious!
